recipe tips
Add a layer of chocolate ganache or caramel between the pumpkin and cream cheese layers for added flavor.
Sprinkle cinnamon or nutmeg on top of the final layer for garnish.
Serve with a drizzle of caramel sauce on top.
If the mixture is too thick when combining the pudding and milk, you can add a bit more milk.
For a festive touch, garnish with whipped cream and a sprinkle of crushed graham crackers before serving.
If you're looking for a lower-calorie option, consider using light cream cheese, sugar-free pudding mix, and reduced-fat Cool Whip.
Experiment with different crusts, such as Oreo or vanilla wafer, for variety.
Let the pumpkin lush sit at room temperature for about 15 minutes before serving for easier slicing.
common recipe questions
What is the purpose of using Cool Whip in the recipe?
Cool Whip adds lightness and creaminess to the dessert without the need for whipping heavy cream, and it provides a nice texture to the layered filling. It also tends to be more stable than whipped cream and won't "wilt" as quickly.
Can I substitute fresh pumpkin for canned pumpkin?
You can use fresh pumpkin puree, but you will need to cook and puree the pumpkin beforehand, making sure it's well-drained and not too watery.
Can I use pumpkin puree instead of pumpkin pie filling?
Yes, but you'll need to add some spices and sweetener to it such as pumpkin pie spice or some cinnamon, ginger, allspice, and sugar (as desired).
What can I use instead of powdered sugar?
If you don't have powdered sugar, you can make your own by blending granulated sugar in a food processor until it becomes fine, though the texture may not be as smooth.
Can I use a different type of nut?
You can substitute the nuts with your favorite type, such as pecans, walnuts, or almonds, or even omit them if you prefer a nut-free dessert.
What can I do if I don't have instant vanilla pudding mix?
You can use a different flavor of instant pudding mix, like butterscotch or cheesecake, to change the dessert flavor. Just make sure it is instant as the cook-and-serve kind won't work in this recipe.
Can I prepare this in advance?
Yes, this dessert can be made a day or two in advance. Keep it covered in the refrigerator until ready to serve.
How should I store the leftovers?
Leftovers should be stored in an airtight container in the refrigerator, where they will keep for about 3-4 days.
Can the Pumpkin Lush be frozen?
While it is best served fresh, you can freeze it for up to a month. However, the texture may change after thawing.
What can I do to prevent the graham cracker crust from getting soggy?
You can chill the crust before adding the filling to help keep it from getting soggy.
Can I use other types of whipped topping?
You can use homemade whipped cream or other varieties of store-bought whipped topping but it may not have the same texture or hold its shape as well.
tools needed
Mixing Bowls: Multiple mixing bowls are required for separately combining the ingredients, including one for the pudding and milk, another for the cream cheese and powdered sugar.
Measuring Cups: For measuring ingredients such as the milk, powdered sugar, and nuts.
Whisk: For mixing the pudding and milk together until thick.
Electric Mixer: For beating the powdered sugar and cream cheese together until fluffy.
Spatula: A rubber or silicone spatula is important for folding the whipped topping into the cream cheese mixture, as well as for spreading the layers evenly in the crust.
what goes with it?
Spiced Whipped Cream: Add a touch of cinnamon and nutmeg to homemade whipped cream for a warm, spiced element that enhances the pumpkin flavor in the dessert.
Caramel Drizzle: A silky caramel sauce drizzled on top provides a sweet contrast to the creamy layers.
Candied Pecans: Sweet and crunchy, these make for a perfect topping to add texture and a hint of sweetness that pairs well with the creamy layers of the pumpkin lush.
Coffee: A nice cup of coffee or a pumpkin spice latte can top off the dessert experience.
Chocolate Shavings: A sprinkle of dark chocolate shavings on top offers a slightly bitter contrast that rounds out the sweetness of the pumpkin and cream layers.
Pumpkin Lush Milkshake: Blend some of the leftover pumpkin lush (crust included!) with milk and vanilla ice cream for a decadent milkshake.

This is my favorite. I'm not a fan of traditional pumpkin pie either, but this one is delicious.
