The name, vodka, comes from the Russian phrase zhiznennaia voda, or "water of life". It can be made from everything from potatoes to beets. It's considered to be fairly flavorless which makes it a great liquor for mixed drinks.

ingredients
1 can (15 ounce size) pumpkin
1 can (12 ounce size) evaporated skim milk
3/4 cup egg substitute
3 teaspoons pumpkin pie spice
2/3 cup Splenda sugar substitute
1 teaspoon vanilla extract
1/2 teaspoon salt
directions
Combine all ingredients in medium bowl and beat until smooth.
Pour into a 9" pie pan, sprayed with vegetable oil. Bake at 400 degrees F for 15 minutes then reduce to 325 degrees F for 45 minutes.
