2 tablespoons honey
1 tablespoon fresh-squeezed lemon juice
1 tablespoon barbecue sauce
1 tablespoon soy sauce
1 teaspoon cold water
1 teaspoon cornstarch

Combine the apricot ham, honey, lemon juice, barbecue sauce, and soy sauce in a bowl and mix until smooth. Pour evenly over the turkey.
Cover the crock pot and cook on high heat for 3 hours or until the turkey is cooked.
Remove the turkey from the crock pot and keep warm (can tent with foil or place in a 200 degrees F oven).
Pour the sauce from the crock pot into a saucepan. Heat the saucepan over medium-high heat, stirring constantly, until boiling. Combine the cold water and cornstarch in a bowl until smooth and pour into the sauce. Cook, stirring, until thickened.
