These Belgian waffles use a sourdough starter as the base. You can purchase it as a mix (check the baking aisle) or make your own starter from scratch. If you are making the starter fresh, note that it usually takes a few days to complete.
3 cups all-purpose flour
1/3 cup sugar
3 teaspoons baking powder
3/4 teaspoon baking soda
1 1/2 teaspoon salt
1 1/2 teaspoon ground ginger
3/4 teaspoon ground cinnamon
3 eggs
3/4 cup sourdough starter, at room temperature
3/4 cup molasses
1/2 cup vegetable oil
1 1/2 cup milk
In a large glass or plastic bowl (do not use metal bowls or utensils for this recipe) combine the flour, sugar, baking powder, baking soda, salt, ground ginger, and ground cinnamon.
In another bowl, beat the eggs. Stir the sourdough starter, molasses, oil, and milk into the eggs and mix well.
Add the sourdough mixture into the flour mixture and stir well with a plastic spatula until mixed. Let the batter rest for 10 minutes.
Meanwhile, heat the Belgian waffle iron as directed by the manufacturer. Brush the grids with vegetable oil.
Pour batter onto the grids to cover evenly. Close the lid and bake as directed or until the steaming stops. Repeat with remaining batter.
Serve hot with maple syrup and other toppings as desired.
