This recipe is the excuse you've been looking for to buy a waffle maker. Pecans in the batter and extra nuts with syrup on top really set these waffles apart. Somebody make these into an ice cream sandwich ASAP!

2 eggs, separated
1 1/2 cup whole milk
2 tablespoons baking powder
1 cup all-purpose flour
1/2 cup melted butter
1/2 cup chopped pecans or walnuts, plus more if desired
Preheat and grease a waffle iron as directed by the manufacturer.
Beat the egg whites in a bowl until stiff peaks form.
In another bowl, beat together the egg yolks, milk, baking powder, flour, and melted butter. Mix until smooth. Fold in the egg whites and nuts.
Add the batter to the waffle iron as directed by the manufacturer. Cook until browned, serve warm with maple syrup and extra pecans, if desired.
