2 packages (12 ounce size) pound cake
8 ounces mascarpone cheese
1 pint heavy cream
3/4 cup sugar
1 teaspoon vanilla extract
1/4 cup brandy
1/4 cup Kahlua
1 1/2 cup coffee, strong
cocoa powder
directions
In a bowl, at medium speed, beat mascarpone with heavy cream and 1/2 cup sugar until soft peaks form. Beat in 1 Tbsp. brandy and vanilla, until stiff.
In a small bowl, combine coffee with remaining brandy and sugar, and Kahlua. Stir until dissolved.
Slice pound cake into thin slices. Place a thin layer of cheese mixture in a deep square pan or dish. Place cake slices on top side by side.
Sop cake with coffee mixture. Smooth 1/3 of cheese mixture over cake. Continue layering, ending with cheese. Sprinkle with cocoa powder and refrigerate at least 1 hour.
Remove from refrigerator about 20 minutes before serving.
