ingredients
1 package (8 ounce size) low-fat cream cheese, softened
2 cups low fat milk
1 package (8.5 ounce size) angel food cake (cut into 1-inch slices)
1 package (8 ounce size) fat free frozen non-dairy whipped topping
1 cup sliced strawberries
1 cup raspberries or blueberries
1 package instant vanilla pudding mix (sugar free, low fat)
directions
Beat cream cheese in a large bowl using an electric mixer. Slowly add milk, 1/2 cupful at a time and mixing well. Add pudding mix and mix well. Gently stir in whipped topping and then fold in fruit.
Arrange 1/3 of the angel cake slices into a serving bowl. Top with 1/3 of the pudding and then 1/3 of the fruit mixture, repeat layers two more times.
Refrigerate until set (about 30 minutes) and serve.

This is a wonderful dessert! The only thing I do differently is that I bake my own cake (I use a Pillsbury reduced sugar mix). When using your own baked cake, double the recipe so you have enough to do layers for an entire cake. Also, the recipe says to fold in the fruit with the pudding mixture - I think that is a mistake. The fruit is put on top of the pudding mixture in making layers. You can actually use any flavor of sugar free pudding mix you like. Try white chocolate or cheesecake. This makes a very delicious and pretty dessert! Thanks for sharing this.
