Yummy Tuna Salad Sandwich

ingredients
1 can albacore chunk tuna in water
2 tablespoons mayonnaise (not Miracle Whip!)
1 tablespoon freshly grated parmesan or romano cheese
1 teaspoon Grey Poupon classic mustard
1/2 teaspoon tiny capers
directions
Press as much water out of the tuna as you reasonably can, and flake it into a bowl. Add remaining ingredients and toss gently until well-combined but not mashed.
Serve inside hollowed-out tomatoes, on lettuce, or with lettuce (and tomato if desired) on good wheat bread, or however you like.

This is The Best Tuna Salad, IMO. Of course, I made it to my particular tastes, which you may find unusual. I'll give you approximately the proportions I use; adjust as you like.

It may look like a sad little package shoved in the back of your freezer, but frozen spinach actually has a lot of culinary uses (and some may surprise you).
Not to be confused with evaporated milk, sweetened condensed milk is very sweet (and very sticky) and used primarily in desserts.

I'm not crazy about sweet tuna salad, and so many times a tuna salad recipe is bland. This one is anything but! I scaled this one up, because I had a bulk can of skipjack tuna (4 lbs.). The only modifications I made to the recipe were to reduce the mustard by about one-third (only because I ran out!), and I added a finely-chopped, medium red onion. This one is definitely going into my permanent recipe files!

I'm never considered myself big fan of tuna, but i found this be a delicious dish. Albacore has a much richer flavor than regular brown tuna. I substituted the capers for a 1/4 teaspoon of celery seed & added a little extra dijon mustard for flavor. Thanks for this great dish!!
