It may look like a sad little package shoved in the back of your freezer, but frozen spinach actually has a lot of culinary uses (and some may surprise you).

Pasta salad meets coleslaw. Spaghetti noodles mixed with cucumber and cabbage in a creamy dressing make a great side dish for a potluck or cookout.

2 cups cooked spaghetti
1 onion, finely chopped
1 cup diced cucumber
1 cup thinly sliced bell pepper or celery
3 cups shredded cabbage
1 teaspoon salt
4 teaspoons sugar
1/4 cup milk
1 1/4 cup mayonnaise
3 tablespoons white vinegar
Combine all the ingredients in a bowl and mix well. Cover the bowl and refrigerate for 3 hours or overnight.
Stir before serving. Add additional mayonnaise and milk if the pasta has absorbed the liquid and the salad seems dry.
