Combine breadcrumbs and oil in a small heavy skillet; toast over medium heat, stirring constantly, until golden brown, 2 to 3 minutes. Transfer to a small bowl and let cool.
To make the breadcrumbs from scratch, simply lightly toast one slice of bread until very dry. Let cool completely then process in your food process until it forms crumbs. The bread should be very dry before processing. This works great for leftover, stale bread.
