ingredients
2 tablespoons soy sauce, or more to taste
2 tablespoons rice vinegar, or more to taste
1/2 teaspoon sugar, or more to taste
1/2 teaspoon hot paprika or cayenne pepper
2 teaspoons dark sesame oil
1 1/2 tablespoon sesame seeds, toasted
1/2 teaspoon freshly ground black pepper
8 romaine lettuce leaves, rinsed, spun dry, and cut crosswise into 1/4-inch strips
1 sweet onion, such as Vidalia, Maui, or Walla Walla, thinly sliced
directions
Combine soy sauce, vinegar, sugar and paprika in a serving bowl and whisk until the sugar is dissolved. Whisk in the sesame oil, sesame seeds, and pepper.
Add the lettuce and onion to the dressing and toss gently but thoroughly. Correct the seasoning, adding soy sauce, vinegar, or sugar as necessary; the salad should be highly seasoned. Serve immediately.

If the stronger-tasting yellow onions are the only ones available, you may wish to blanch the slices in boiling water for 10 seconds, then rinse under cold water, to blunt the bite.
