ingredients
1/2 head lettuce
10 ounces bag fresh spinach
10 slices bacon, fried crisp and crumbled
1 white onion, slivered
1 pint cottage cheese
1 pound fresh mushrooms, sliced
4 hard boiled eggs, crumbled (optional)
1/2 cup cider vinegar
1/4 cup sugar
1 teaspoon dry mustard
1 teaspoon salt
2/3 tablespoon chopped onion
2/3 cup oil
directions
For dressing, put cider vinegar, sugar, mustard, salt and onion in blender. Start it at low speed and slowly add oil. Can be made ahead of time and refrigerated in blender container. Turn blender on again, briefly, before putting on salad.
For salad, mix all ingredients and toss with dressing.
