It may look like a sad little package shoved in the back of your freezer, but frozen spinach actually has a lot of culinary uses (and some may surprise you).
Granny's Frito Salad

ingredients
2 bunches green onions, washed, finely chopped, include greens
2 large nice ripe tomatoes, finely diced
1 small head iceberg lettuce, finely shredded
2 cans pinto beans in gravy or kidney beans, drained
1 regular bottle good Italian dressing
1 package (10 ounce size or so) Fritos corn chips or other corn chips, not the white ones
directions
Layer the ingredients in the order given: onions, tomatoes, lettuce. Spread the beans evenly over the top. Shake the salad dressing bottle, then pour evenly over the salad. Set aside and don't bother it for 2-3 hours.
Just before serving, give the bag of chips to the kids and let them crush them. Spread finely crushed chips on top of the salad and serve. Do not stir the salad at any time. Dig down deep, so you get some of all the goodies.
This will serve a lot of people as a salad, or even a good main dish in summer with some fresh bread.
