ingredients

1 tablespoon sugar
1/4 cup thick coconut milk
2 tablespoons fish sauce
2 1/2 tablespoons lime juice
4 cups bamboo shoots (sliced)
1 teaspoon garlic (crushed)
1 tablespoon fresh red chili pepper (minced)
2 tablespoons fresh herbs (minced, such as basil, dill, coriander)
2 tablespoons scallions (spring/green onions) (finely chopped)
3 shallots (thinly sliced)

directions

Blanch bamboo shoots then drain.

Mix coconut milk, fish sauce and lime juice with sugar, chili pepper, garlic and scallions. Pour over bamboo shoots, mix and let stand for 30 minutes.

Garnish with fresh herbs and shallots.
