A lime-based marinade like this one is ideal for all sorts of Mexican recipes. Giving your chicken a few hours in this marinade will add some feisty flavor and keep the meat moist.
1/4 cup lime juice
1 tablespoon red wine vinegar or fruit vinegar
1 clove garlic, minced
1/2 teaspoon honey
1/4 teaspoon ground coriander
1/4 teaspoon ground cumin
Combine the lime juice, vinegar, garlic, honey, coriander, and cumin in a glass or plastic bowl or zip-top plastic bag. Mix well.
Add up to 1 pound of turkey or chicken, mixing well to coat. Cover the bowl or seal the bag and place in the refrigerator for a minimum of 20 minutes or up to 24 hours. Turn the poultry occasionally so the marinade saturates it evenly. Discard the marinade and cook the poultry as desired.
