ingredients
3/4 cup yellow corn meal
1/2 cup flour
1 1/2 teaspoon baking powder
1/2 teaspoon salt
1/8 teaspoon red pepper (cayenne)
1 cup shredded monterey jack cheese
1 can (4 ounce size) chopped green chiles, drained
1 tablespoon minced onion
1 egg
1/2 cup milk
vegetable oil
directions
Combine first 8 ingredients in a bowl. Make a well in the center of the mixture and add the egg and milk, stir until moistened.
Pour oil to a depth of 3 inches in a Dutch oven and heat to 375 degrees F.
Carefully drop batter by rounded tablespoons into hot oil. Fry a few at a time 3 to 4 minutes or until golden brown, turning once. Drain on paper towels.
Serve immediately.
