ingredients
4 (10 inch size) flour tortillas
1/2 cup Thousand Island salad dressing
1 pound corned beef, thinly sliced
2 cups sauerkraut, drained well
8 slices Swiss cheese
oil spray
directions
Spread 2 teaspoons of the Thousand Island dressing on one side of each tortilla. Layer 1/4th of the corned beef, 1/2 cup sauerkraut and 2 slices of cheese over half of each tortilla. Fold tortilla in half, pressing to seal.
Cook in a skillet sprayed with non-stick cooking spray for 2 - 3 minutes on each side until golden brown. Slice into wedges to serve.
