These quesadilla wedges are meant to look like the popular candy corn candies by using mozzarella, cheddar, and American cheese.

2 flour tortillas (10-inch size)
1/2 cup shredded cheddar cheese
1/2 cup shredded mozzarella cheese
4 slices American cheese
Place one tortilla on a microwave-safe plate. Top with half of the cheddar and half of the mozzarella.
Place the plate in the microwave and cook on HIGH power for 20 seconds.
Place another tortilla evenly on top of the cheese-covered tortilla.
Starting in the middle of the top tortilla, add the remaining mozzarella in a small circle.
Add the remaining cheddar cheese in a ring around the mozzarella.
Lastly, tear the American cheese into strips and layer them around the Cheddar ring to form the final candy corn layer.
Place the quesadilla back in the microwave and heat for 30 seconds or until all the cheese has melted (heat it in 30 second intervals until melted).
Carefully remove the plate from the microwave and let the quesadilla cool for 2 minutes.
Cut the quesadilla into wedges and serve warm.

Made these for my fourth grade son Peter since Halloween is approaching and he was home sick from school. He loved them! Thanks for the tip, Valerie. And the recipe, of course.

How cute are these? They are very cheesy and so simple to assemble. I did cook them just a bit differently. I heated the tortillas in a skillet instead of the microwave initially. I layered the cheese between them and then topped with the candy corn colors and microwaved them just enough to melt the cheese on top. If you let them sit for a minute or so they are easy to cut into fun candy corn wedges.
