Panko-Crusted Halibut Fish Sticks

ingredients
1 1/4 pound halibut
1 cup plain yogurt
1 clove garlic, crushed
1/4 teaspoon salt
freshly ground pepper (optional)
2 cups panko crumbs
2 tablespoons canola oil
directions
Preheat oven to 375 degrees F. Cut fish into sticks.
In a small bowl, mix together yogurt, garlic, salt and pepper (if using) to taste. With tongs, dip fish into yogurt mixture and shake to remove excess.
Place panko crumbs in a resealable plastic bag. Add fish and shake until evenly coated with panko crumbs. Evenly spread oil over baking sheet and place fish sticks on sheet.
Bake for approximately 30 minutes, turning after 20 minutes, or until golden and coating is crispy.
