ingredients
1 1/2 pound fresh pork, cubed
1 medium onion, chopped
1 can (8 ounce size) pineapple chunks in juice
1/4 cup packed brown sugar
2 tablespoons cornstarch
2 tablespoons lemon juice
1 tablespoon soy sauce
1/2 teaspoon salt
1/8 teaspoon pepper
1/8 teaspoon ginger
1 small green bell pepper, sliced
1 package (6 ounce size) frozen pea pods
directions
Mix first 7 ingredients and seasonings in 2-quart glass baking dish. Microwave, covered, on High for 13 to 15 minutes, stirring after 5 minutes.
Stir in green pepper and pea pods. Microwave, covered, on High for 5 to 6 minutes or until vegetables are tender-crisp, stirring after 2 1/2 minutes. Serve over rice.
