ingredients
30 marshmallows
1/2 cup thawed frozen orange juice concentrate
1/2 cup milk
4 cups graham wafer crumbs
1 cup raisins
1 cup currants
2 cups candied mixed fruits
1/2 cup chopped walnuts
1 teaspoon cinnamon
1/4 teaspoon ginger
1 jar caramel sauce
1 quart vanilla ice cream
directions
Melt marshmallows with juice concentrate and milk in double boiler or saucepan over low heat. Stir occasionally until smooth.
Remove from heat. Add, to combine, wafer crumbs, raisins, currants, mixed fruits, walnuts and seasonings; mix well.
Press firmly into 6-cup mold or mixing bowl lined with aluminum foil. Cover and chill at least two days.
To serve, heat 30 minutes at 350 degrees F. Serve warm with ice cream and caramel sauce.
