2 pounds ground beef
1 medium onion, chopped
1 cup sliced celery
1/2 cup chopped green bell pepper
1/2 cup chopped red bell pepper
1 can (28 ounce size) whole tomatoes, undrained, cut up
1 can (6 ounce size) tomato paste
4 cloves garlic, minced
1 teaspoon salt
2 teaspoons chili powder
1 teaspoon cumin
1 teaspoon cayenne pepper
1/2 teaspoon black pepper
2 cans (15 ounce size) light or dark red kidney beans, drained, rinsed
1 can (10 ounce size) diced tomatoes and green chiles (optional)

directions

In a large saucepan or Dutch oven, brown ground beef and onion; drain. Add celery, bell peppers, tomatoes with their liquid, tomato paste, garlic, salt, chili powder, cumin, cayenne and pepper. Bring to a boil. Reduce heat; cover and simmer 1 hour.

Add kidney beans; simmer until thoroughly heated.

Slow-cooker method: Brown ground beef and onion in skillet; drain. Combine with remaining ingredients in slow cooker, cover and cook on High setting for 3 to 4 hours.

Add the optional tomatoes and green chiles along with the other tomatoes for additional "heat".

    Delicious and filling. This chili had a spicy-sweet twang to it (the bell peppers and tomato paste?). I made it on the stovetop and the simmering time enhanced the flavor nicely. I'll mark this recipe to try again sometime.

    Excellent --use the tomatoes and green chilies. I substituted ground turkey. It was quite good.
