ingredients

1 large bag Fritos corn chips
1 large can chili with meat (or fresh chili)
1 large can chopped, stewed tomatoes
1 medium yellow onion, chopped
1 tablespoon olive oil
1 tablespoon cumin
1 medium can sliced black olives (drained)
1 package cheddar cheese
1 fresh chopped jalapeno pepper (canned optional), or to taste
8 tablespoons sour cream (divided)

directions

Spray a long casserole baking dish with non-stick spray, then line it with the Fritos and set aside.

In a medium sized pot or Dutch oven, saute half of the chopped onions in olive oil. When the onions are soft, add the olives and heat. Add the tomatoes and heat, then add the chili.

Once everything in the pot is heated through, pour over the Fritos. Layer cheese on top of the Fritos.

Bake at 350 degrees F until the cheese is melted. Top each serving with sour cream, the remaining onions, and jalapenos.

    Not bad...but what happens to the rest of that half chopped onion? I tossed it all in.

    • Directions say at the end what to do with the remaining onion.

Did you mean: pour the mixture over the Fritos layering the Fritos, cheese and filling alternately, topping the last layer with cheese?

    • No, we believe Josh's directions mean to put A LAYER of cheese over the Fritos. Layering isn't always referring to alternating layers. It also means to spread an ingredient or mixture evenly in whatever manner you are using it (in a pan, over something, etc).
