Pumpkins aren't just for pies or Halloween decorations. These large, orange gourds - while naturally sweet - also work well in savory dishes. They pair well with poultry and pork (and especially bacon) and their creamy-when-cooked texture blends easily into soups.

I thought this dish was extremely easy and took no time to throw in the crock pot. The only thing I would do differently would be to dice the onions instead of thin slice--they turned out kind of worm like after slow cooking. Served with cornbread for a delicious dinner.
