This vanilla mousse is pudding all grown up. It's as easy as boiling water, blending, and waiting for an hour for the mousse to set. Well, on second thought, waiting for an hour might not be easy.
2/3 cup boiling water
2 envelopes unflavored gelatin powder
1/2 cup sugar
1 cup canned evaporated skim milk
1 teaspoon pure vanilla extract
1/8 teaspoon ground cinnamon
2 cups fresh ice cubes
fresh berries, as desired
Combine the boiling water and gelatin powder in a blender and process for 30 seconds. Add the sugar and process for 10-15 seconds or until it is dissolved.
Add the evaporated milk, vanilla, cinnamon, and ice cubes to the blender. Process until the mousse mixture is smooth, about 2 minutes.
Divide the vanilla mousse between individual dessert dishes. Place in the refrigerator and chill for one hour.
Just before serving, garnish the vanilla mousse as desired with fresh berries.

I loved this. It turned out exactly as I wanted it to. I would love to make it in chocolate as well. What can I do to change this to chocolate mousse?
You could add either cocoa powder or melted chocolate? Sorry I don't have more precise info but we haven't tested it with chocolate.
