Easy three-ingredient ice cream sandwiches made with your choice of ice cream, chocolate wafer cookies, and chocolate chips.

30  round chocolate wafer cookies
1 quart ice cream, softened
1 package (12 ounce size) mini chocolate chips
Place half of the cookies, flat side up, on a baking sheet. 
 Top each wafer with a small scoop of ice cream. Quickly top the ice cream with another wafer, flat side down. 
 Gently press down on the top wafers to spread the ice cream to the edges. You can run a knife around the edge to smooth the sides, if needed. 
 Place the baking sheet in the freezer and freeze the ice cream sandwiches for 1 hour or until firm. 
 Place the miniature chocolate chips in a shallow dish. Roll the sides of the ice cream sandwiches in the mini chips so any exposed ice cream is coated in the chips. 
 Serve the ice cream sandwiches immediately or freeze in an airtight container until ready to serve.
For this recipe, any flavor of ice cream can be used, but a firm texture is important to prevent melting too quickly.
You can vary the recipe by using different types of cookies such as graham crackers, sugar cookies, or oatmeal cookies.
Allow the ice cream to soften at room temperature for about 5-10 minutes, depending on the temperature of your kitchen, until it is easily scoopable.
You can use regular-sized chocolate chips, but mini chocolate chips are recommended for easier adherence to the sandwiches and it just makes eating them easier. You could use chocolate sprinkles, chopped nuts, or other edible decorations in place of the mini chips.
These ice cream sandwiches can be made a few days in advance and stored in the freezer in an airtight container until ready to serve.
Store the ice cream sandwiches in an airtight container in the freezer to prevent freezer burn or ice crystals from forming.
Work quickly and keep the ice cream and cookies as cold as possible while assembling the sandwiches to prevent melting.
Cookie Sheet: Used to assemble the ice cream sandwiches by placing the chocolate wafer cookies on it before adding the ice cream and the top cookie.
	
Ice Cream Scoop: For placing a small scoop of softened ice cream onto each chocolate wafer cookie.
Shallow Dish: To hold the mini chips, making it easy to roll the ice cream sandwiches in them.
Coffee: The rich, bold flavors of coffee would pair perfectly with the sweetness of the ice cream sandwiches. Plus, the caffeine kick will help balance out the sugar rush.
Fresh fruit salad: A light and refreshing fruit salad would provide a nice contrast to the richness of the ice cream sandwiches. Plus, the fruit will add a pop of color to your dessert spread.
Salted caramel sauce: Drizzle some of the sauce on the top of the ice cream scoop before adding the top wafer.
Nutella: Slather some creamy Nutella between the wafers for an extra layer of indulgence.
 
Crushed Oreos: Use crushed Oreos in place of the mini chips for a different taste and texture.

What fun! We made these for National Chocolate Wafer Day. Tip: overstuff the filling of the ice cream sandwiches. You can trim it off with a sharp knife to give the edges a smooth look. Best when allowed to sit in the freezer overnight as the cookies will soften a little. Great treat!
