Slow Cooker Apple-Cranberry Crepes

ingredients
  nonstick cooking spray
1 large baking apple, such as Gala or Jonathan, peeled, halved and cored
1 large tart apple, such as Granny Smith, peeled, halved and cored
1/4 cup dried sweetened cranberries or cherries
2 tablespoons lemon juice
1/2 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
1/2 teaspoon ground cloves or allspice
1 tablespoon margarine
1/4 cup orange juice
1 tablespoon sugar
1/4 teaspoon almond extract
1/4 teaspoon cornstarch
4  prepared crepes
1/4 teaspoon ground cinnamon
1 cup vanilla ice cream (optional)
directions
Coat a slow cooker with cooking spray. 
 Cut each apple half into 3 wedges. Place apple wedges, cranberries, lemon juice, 1/2 teaspoon of the cinnamon, nutmeg, and allspice in slow cooker, and toss to coat. Cover and cook on LOW for 2 hours. 
 Add margarine to apple mixture and toss until just melted. 
 Combine orange juice, sugar substitute, almond extract and cornstarch in a small bowl. Stir until cornstarch dissolves. Add mixture to apples, stirring to blend. Cover and cook on HIGH for 15 minutes to thicken sauce slightly. 
 Place a crepe on each individual dessert plate. Spoon equal amounts of the apple mixture down the center of each crepe. Fold edges over and turn crepes over with seam side down on plate. Sprinkle with the remaining cinnamon. 
 Heat filled crepes in microwave, if desired, according to directions on package. 
 Spoon equal amounts of the ice cream, if using, alongside each serving.
