ingredients

12 ounces fresh cranberries
1 cup sliced celery
1/2 cup chopped walnuts
1 cup boiling water
1 package (3 ounce size) strawberry gelatin powder
1/2 cup white sugar
1 can (16 oz size) crushed pineapple, undrained

directions

Combine the cranberries, celery, and walnuts in a food processor. Process on pulse mode until lightly chopped.

In a bowl, stir together the boiling water, gelatin powder, and sugar. Mix until the sugar and gelatin are dissolved.

Stir the chopped cranberries and pineapple (undrained) into the gelatin mixture. Mix well then pour into a decorative mold (or serving bowl). Cover and place in the refrigerator until set (2-3 hours minimum).

When ready to serve, unmold the salad onto a plate lined with lettuce leaves (if using a decorative mold, otherwise just leave in the serving bowl) and serve immediately.

    This recipe is better than using canned cranberries as it is more crunchy and tart. I use one fresh orange instead of the pineapple at times. I love food contrast so I use heavy whipping cream instead of mayo, but I like this as a dessert as a tart contrast to a turkey meal at the holidays. [edited for clarity]

    I have tried several of these cranberry recipes. This one is the best by far. It is not only easy it is not to sweet or sour. I replaced the walnuts with pecans because I like them more. I have used this for years at all types of occasions. It is a hit every time. I think the strawberry works better than the ones for cherry jello. You can miss with this one and is easy to change to add other taste you might enjoy.

    I was looking for a recipe that seemed similar to the one Mom used to make. This looked close. I made it using raspberry Jello and pecans instead of walnuts.I filled the center of the mold with real mayonnaise. I just served it for our Christmas eve Christmas dinner. I'm known in the family for my cooking but this dish got some of the best rave reviews I've ever received. No hesitation about recommending this recipe!

    I fixed this recipe last year (2006) and my 6 ans 8 year old granddaughters loved it. While they were here I fixed it two or three times. I also used sugar free Jello and it turned out great. I would rate it a 5+ , we all loved it.
