In another saucepan, combine the remaining sugar, butter, and heavy cream over medium heat. Cook, stirring constantly, until the mixture comes to a boil.
Remove the pan from the heat and stir in the caramelized sugar. Return the pan to the heat and bring to a boil again. Cook for 2 minutes stirring constantly.
Remove the pan from the heat and beat with a mixer until spreading consistency is achieved.
