ingredients

2 tablespoons sugar
1 cup sugar
1/2 cup butter
1/2 cup heavy whipping cream

directions

Place the first measure of sugar in a heavy saucepan over medium heat. Cook, stirring frequently, until the sugar dissolves and begins to caramelize. Remove the pan from the heat and set aside.

In another saucepan, combine the remaining sugar, butter, and heavy cream over medium heat. Cook, stirring constantly, until the mixture comes to a boil.

Remove the pan from the heat and stir in the caramelized sugar. Return the pan to the heat and bring to a boil again. Cook for 2 minutes stirring constantly.

Remove the pan from the heat and beat with a mixer until spreading consistency is achieved.
