It may look like a sad little package shoved in the back of your freezer, but frozen spinach actually has a lot of culinary uses (and some may surprise you).

Layers of chocolate chips, nuts, and coconut are baked into these gooey dessert bars.
1/2 cup margarine, melted
2 cups vanilla wafer crumbs
1 cup chocolate chips
1/2 cup chopped nuts, pecans, walnuts, etc
1 cup sweetened coconut flakes
1 can (14 ounce size) sweetened condensed milk
Preheat the oven to 350 degrees F.
Pour the melted margarine in the bottom of an 8x11 baking dish.
Sprinkle the wafer crumbs over the top of the margarine, followed by the chocolate chips, nuts, and coconut flakes.
Pour the sweetened condensed milk evenly over the top of the coconut.
Bake at 350 degrees F for 30 minutes. Remove from the oven and let cool before cutting into bars. Store the bars in an airtight container.

You will love these delicious gooey cookies. They are easy to make. If you get unexpected company these can be a wonderful treat for you and your guests. You can bring a few to work for break time snacks instead of buying from the vending machines. Give this recipe a try!
