Broccoli And Cheese Lasagna Roll-ups

8 lasagna noodles
2 egg whites, slightly beaten
1/2 cup Mexican blend cheese
1/4 cup grated Parmesan cheese
1 package (10 ounce size) frozen chopped broccoli, cooked & drained
1 1/2 cup spaghetti sauce
1/2 cup Mozzarella cheese, shredded
directions
Cook noodles according to package instructions Drain and set aside. Preheat oven to 350 degrees F.
In a large bowl, stir together egg whites, Mexi-blend and Parmesan cheeses. Add broccoli to cheese mixture. Stir until mixed well.
Spread a thin layer of spaghetti sauce on the bottom of 12" X 7 1/2" baking dish.
To assemble rolls: Put 1 noodle at a time on wax paper. Mound 1/4 cup broccoli/cheese mixture 1/4" from short end. Roll noodle around mixture. Place seam side down in the baking dish.
Pour the rest of the spaghetti sauce over the roll-ups. Sprinkle with mozzarella. Cover with foil and bake at 350 degrees F for 35-45 minutes.
