Ah, the unassuming envelope of onion soup mix. It's more than just for onion soup (or dip). It adds tremendous flavor (and convenience) in all these recipes.

ingredients
1 pound boneless, skinless chicken breasts, cubed
salt and pepper
2 onions, diced
2 stalks celery, diced
2 cloves garlic, minced
1 teaspoon cumin
2 tablespoons butter
1 can white corn, drained
3 cups chicken broth
1 tablespoon chili powder
2 cans drained white beans (e.g., kidney, Great Northern, navy, etc.)
1 can black beans, drained
sour cream
shredded cheese
directions
Preheat grill.
Skewer the chicken and season with salt and pepper. Grill for 8 minutes.
Saute onion, celery, garlic and cumin in butter in Dutch oven. Add chicken. Stir in corn, broth, chili powder and bring to boil. Cover and simmer for 30 minutes.
Add beans and simmer 30 minutes. Serve with sour cream and cheese. May want to add red pepper flakes to taste.
