Slow Cooker Brisket Dinner

ingredients

1 pound small boiling onions, peeled
6 medium carrots, peeled and sliced
1 bay leaf
5 pounds brisket, trimmed of excess fat
2 teaspoons salt
1 1/2 teaspoon dried thyme
1 cup water

directions

Place the onions, carrots, and bay leaf in the crock pot. Top with the brisket. Sprinkle the brisket with the salt and thyme. Carefully pour the water in (so as not to wash the seasoning off the brisket).

Cover the crock pot and cook on low heat for 6-8 hours or until the brisket is cooked and tender.

Remove the brisket from the crock pot and slice against the grain. Serve with the vegetables.
