Old Style Green Chile Enchiladas

Classic chicken enchiladas made with cooked chicken, green chiles, onion, sour cream, tortillas, and cheese. They are baked, then served topped with a fried egg.

ingredients

2 tablespoons flour
1/4 cup water
4 cups chicken stock
1 cup chopped cooked chicken
1 cup green chilies, peeled and chopped
1 teaspoon ground cumin
salt
1 clove garlic, crushed
8 tortillas
cooking oil
1 1/2 cup grated Jack or Cheddar cheese or more
1 medium onion, chopped
2 cups sour cream
4 eggs, lightly fried (optional)
1 head lettuce, coarsely chopped
2 fresh tomatoes, cut in wedges (optional)

directions

Mix flour with water to make a smooth paste. Mix in the stock and blend well in a 2 quart pan. Cook until slightly thickened.

Add chicken and green chilies. Season with cumin, salt to taste and garlic. Simmer together for about 15 minutes. Add more flour mixed with water if thicker sauce is desired.

Meanwhile, lightly fry tortillas in about 1-inch hot oil in skillet. Warm serving plates in oven.

Mix 1 cup of grated cheese with the chopped onion and sour cream.

Prepare the enchiladas by placing a spoonful of sauce on each warm plate. Lay a tortilla on top, then spoon on more sauce to cover tortilla and add a spoonful of the sour cream mixture. Continue until each plate has 2 tortillas and all the sauce is used. Top each with a generous dollop of the sour cream mixture and sprinkle with remaining cheese.

Place in a 400 degrees F oven to melt cheese.

When the cheese is melted, place a fried egg on each stack of tortillas if you wish. Top and encircle each enchilada with chopped lettuce and tomato wedge.
