Chicken Enchilada Bake

ingredients
2 cans white chunk canned chicken breast
1 can (10.75 ounce size) pepper jack or nacho cheese soup
8 ounces sour cream
1 can (4 ounce size) diced green chiles
10 small tortillas (flour, wheat or corn)
1 large bag shredded Cheddar or Mexican blend cheese
directions
Mix soup, chicken, sour cream and green chilies together in a bowl.
Layer tortillas in the bottom of a 13 X 9 baking pan, then pour some of your chicken filling from the bowl over the tortillas (about half) and spread evenly.
Sprinkle a layer of shredded cheese. Repeat steps for another layer and cover with remaining cheese.
Bake at 400 degrees F until hot, brown and bubbly! Takes about 20-30 minutes. Serve with sour cream, chopped lettuce, salsa and any other toppings desired (Black olives, guacamole, chopped tomatoes, etc)

I have a large family with some picky eaters. This recipe was easy and easily adaptable. I used cheddar cheese soup. Didn't have chilies so I took some salsa (ran it thru a blender for a smooth texture) and added it to the cheese soup and sour cream. Served it with taco sauce & hot sauce for individual preferences. Good recipe for teaching kids to cook - extremely easy! TASTES GREAT!

I took CD recommendation for cheese soup, I added some pepper jack cheese into the soup and heated through to melt the cheese down and let cool, I also used fresh chicken breast and boiled then shredded. Delicious quick and simple the whole family loved and the left overs were even better the next day at lunch
The recipe sounds so good BUT big problem you cant find the soup anymore so I have all the ingredients except the soup. Will need to find alternative for soup.
