ingredients
3 1/2 pounds chicken pieces
water to cover
salt and pepper
dried onion flakes
seasoned salt
1 stalk celery
1 large package slim egg noodles
well seasoned chicken broth
1 pound processed cheese product, grated
1 can cream of mushroom soup
1 large can pimientos, chopped
1 can peas, drained
directions
Place chicken pieces in 6 quart kettle and cover well with water. Add salt, pepper, onion flakes, seasoned salt and celery for flavor. Boil until tender. Remove to cool, then dice into 1-inch cubes.
Next, cook egg noodles (small curly egg noodles are good) in chicken broth. When noodles are tender, add cheese, mushroom soup, pimento and peas. Add diced chicken last. Mix well.
Pour into 9- x 13-inch baking dish and cover with foil. Bake for 45 to 50 minutes at 350 degrees F.
This may be successfully prepared ahead and frozen. Allow to thaw then bake as directed.
