Hey, kids! For Valentine’s Day, forget the candy . . . how about cooking breakfast for someone you love today. . . what better way to say I Love You?
Breakfast. It’s the first meal of the day and it was the first meal my kids cooked for me. Several years ago I was recovering from a nasty case of the flu, and I was the last one out of bed that morning, when the kids rushed in hungry:
How about if we make breakfast for you today, Mom?
Can we, Mom? That would be fun!
Ten minutes later they called me out to a plate filled with scrambled eggs, bagels with cream cheese, and hot tea. This was one of the first times they had collaborated in the kitchen—and I have to admit—the best part of it was hearing them work together . . . the planning, the laughter, the collaboration of who would do what.
One super thing about breakfast foods is they tend to be simpler to prepare than traditional dinner foods. Hot cereals are simmered in one pot. Scrambled eggs and brown ‘n serve sausages are ready in minutes. Juice and milk are all set to pour, and sliced fruit and yogurt is not only simple, but also handy and healthful, with different varieties making it easy to please different taste buds. Pancakes, a perennial favorite, are also great practice for mixing and flipping.
And don’t forget protein shakes: they’re another easy breakfast that kids can make. Combine milk, frozen fruit, and your favorite protein powder in the blender. Whizz for 20-30 seconds and you’ve got a filling start to the day—great for when solid food won’t settle so early in the morning.
So if you haven’t yet had your kids in the kitchen to help start your day, drop some hints for Valentine’s Day. Chances are, they would not only love to make you breakfast, but have been waiting for the perfect chance to show you how well they can do on their own—and how much they love you.
Here’s a scrambled egg recipe directly from my son:
Serves/Makes: 1
- 3 eggs
- 1 tablespoon water
- 1 dash dried oregano
Place a medium non-stick skillet over medium heat.
Break eggs into a small bowl; add the water and oregano. Beat the eggs with a fork or whisk for 10 seconds or until mixed thoroughly.
When the skillet is hot, spray with vegetable oil spray. Pour eggs into pan, and they should immediately start to set up.
Using a spatula, scrape the eggs until all wet parts are against the pan bottom and turn solid. Continue to stir eggs until they are completely cooked.
Turn off heat and serve with ketchup, salsa or Tabasco sauce.
