Rich Cream of Celery Soup

ingredients
3 stalks celery, finely chopped
1 small onion, finely chopped
1/2 pint fat free beef stock
6 ounces milk
2 teaspoons cornstarch
salt and pepper
directions
Combine the celery, onion, and beef stock in a saucepan over medium heat. Cook for 20 minutes or until the vegetables are tender.
Combine the cornstarch and milk and mix until smooth. Add the milk mixture to the saucepan while stirring. Continue to stir until the mixture returns to a simmer.
Reduce the heat to low and let cook for 10 minutes. Season to taste with salt and pepper. Serve hot.

I made this for my elderly mother and her friend for lunch but she wouldn't give her friend any after she'd tasted it. She ate the lot.
