ingredients
9 ancho chilies
3 pasilla chilies
1/4 cup garlic, minced
1 tablespoon cinnamon, grated
2 teaspoons oregano, toasted
2 teaspoons cumin, toasted
1 1/2 teaspoon cayenne pepper
1 1/2 cup cranberries
3 cups white wine
3 tablespoons olive oil
directions
Seed, toast and soak chilies. Combine chilies with remaining ingredients and puree in a blender or food processor.
Fry the mixture in 1/2 Tbsp. olive oil and simmer for 30 minutes. Strain the mixture and refry it in remaining olive oil. Simmer for another 20 minutes.
Thin the mixture to desired consistency with purified water and season as necessary to bring out a robust flavor.
