Chermoula is a Moroccan marinade made with olive oil, spices, and fresh cilantro. It pairs well with fish, vegetables, or as a sauce for beans.

1/2 cup olive oil
1 tablespoon cumin
2 tablespoons lemon juice
1/2 teaspoon salt
1/2 teaspoon black pepper
1 tablespoon sweet paprika
1/2 teaspoon ground ginger
1/2 teaspoon dried marjoram
12 fresh cilantro sprigs, minced
Combine all the ingredients together and mix until well blended.

Used this chermoula sauce on some baked eggplant and it was very good. Simple to make.
