Rice Pilaf For 100

A seasoned rice dish that can be served with any kind of meat or vegetable. With rich infusions of mouth-watering stocks and aromatic hints of garlic, this dish is guaranteed to be a favorite at any gathering.

ingredients

1 cup butter or margarine
1 cup shortening
3 quarts onions, finely chopped
6 cloves garlic, minced
10 pounds rice
3 1/2 gallons beef or chicken stock, boiling
9 tablespoons salt

directions

Melt butter or margarine and shortening and divide into 2 pans.

Saute equal amounts of onions and garlic in each pan until onions are a light yellow.

Add an equal quantity of rice to each pan. Cook until rice is lightly browned, stirring constantly.

Add 1 3/4 gallons stock and 3 oz. salt to rice in each pan. Cover pans.

Bake 1 hour or until rice is tender. Remove from oven; stir lightly with a fork. Pan Size: 18 by 24-inch Roasting Pan Temperature: 400 degrees F. Oven

    I cook for the homeless in Savannah Georgia weekly and the so love rice I'm gonna give this a try on 2/4/19 hoping for the best I need for at least 100 Thanks

    I added more garlic (6 cloves for 10 pounds of rice just didn't seem like it would even be noticeable) and some dried spices (I just winged it - added some cumin and others) because this was going to be served with chicken which wasn't overly spicy. Turned out great.

    Did a big church dinner the other night and tried this along with a couple other "recipes for 100" from this site. This turned out really good. We used smaller pans though as we didn't have pans in the size mentioned. The cooking time was about the same anyway. We used ice cream scoops to serve it which made portioning it quite easy.
