ingredients
CRUST
1 package pecan sandie cookies, crushed
1 stick butter, softened
FILLING
3 large eggs
15 ounces can pumpkin
14 ounces can sweetened condensed milk
8 ounces cream cheese, softened
2 teaspoons pumpkin pie spice (or cinnamon/nutmeg mixture to taste)
1 tablespoon pure vanilla extract
1/2 teaspoon salt
directions
Combine crust ingredients. Reserve 1 cup and press remaining crumb mixture into a 9X13 pan. Combine filling ingredients in order given and pour gently over crust. Bake at 350 for 45 minutes or until tests done. Serve warm or chilled with whipped topping if desired.
Variation: Combine a can or cranberry sauce with 2 tablespoons orange juice, heat until melted and blended. Spread over crust, top with filling.
