Keeping a can of frozen orange juice concentrate in the freezer means you can make more than just orange juice. Try it in a variety of orange-flavored recipes.


Dough
1 cup flour
2 tablespoons sugar
2 teaspoons baking powder
1/2 teaspoon salt
3 tablespoons shortening
1/2 cup milk
Filling
6 fresh peaches, peeled and sliced
Topping
1/2 cup sugar
1/2 teaspoon salt
1/2 teaspoon cinnamon
2 tablespoons butter
For the dough: Sift the first 4 ingredients together. Then cut in the shortening with a pastry bender; add milk and stir to make a soft dough. Pat out dough 1/4" thick into 8" heavy iron skillet, allowing some of the dough to hang over edge.
Place peaches on dough.
For the topping: Mix sugar, salt and cinnamon; sprinkle over peaches and dot with butter.
Fold hanging dough toward center, leaving a little space uncovered.
Bake at 425 degrees F for 25 minutes.
Serve with ice cream.

I made this today and everyone loved it! My smallest cast iron skillet is 10 inches so I increased all the ingredients by half and it worked out great. The dough was easy to work with - just make sure you have enough flour when rolling it out.
