1 package (4 serving size) sugar-free cook and serve vanilla pudding
1 package (4 serving size) sugar-free cherry gelatin
2 cans (16 ounce size) red tart cherries
1/2 teaspoon almond extract
12 packets sugar substitute (added after removing saucepan from stove burner)
1 package prepared pie crust (9-inch size), optional
Drain the cherries; save the juice and add enough water to make 2 cups of liquid.
Mix the dry pudding, dry gelatin, 2 cups of liquid mix and almond extract in a medium saucepan. Bring to a rolling boil, stirring constantly. Remove from the heat and add the cherries and sugar substitute. Pour into prepared pie shell or bowl. Let cool before serving.
This will make filling for pie or can be used just as a pudding. Top with whipped topping if desired.
