Keeping a can of frozen orange juice concentrate in the freezer means you can make more than just orange juice. Try it in a variety of orange-flavored recipes.
Easy Spinach Manicotti

ingredients
1 package manicotti pasta or jumbo shells
1 jar pasta sauce
1 container ricotta cheese
1 egg white (or egg replacer)
1 can spinach
1 package mozzarella cheese, shredded
directions
Cook manicotti or shells until almost done; the pasta should still be a little firm. Drain and let pasta cool.
In a bowl, mix ricotta cheese, spinach, and egg white with half of the package of mozzarella cheese. Mixture should be a little thick, not runny. If runny, add more mozzarella cheese. Add about 3 tablespoons of pasta sauce to mixture and any herbs you prefer -- basil, oregano, parsley, and so on.
When manicotti is cool, stuff with mixture and place in a baking pan. Top with remaining pasta sauce and sprinkle with remaining mozzarella cheese.
Bake for about 30 minutes at 350 degrees F or until cheese is fully melted on top.
NOTE: If canned spinach is not available, use frozen.
