Fanned Baked Potatoes

ingredients
6 medium potatoes
1 teaspoon salt
4 tablespoons melted butter
3 tablespoons chopped chives
1 teaspoon parsley
1/3 cup grated cheese
2 tablespoons Parmesan cheese
directions
Scrub and rinse potatoes. Slice potatoes into thin slices being careful not to cut all the way through. Use a handle of a wooden spoon on each side of the potatoes to prevent knife from cutting all the way through.
Put potatoes in a baking dish. Fan them slightly. Sprinkle with salt and drizzle with butter. Sprinkle with herbs and bake potatoes at 425 degrees F for 50 minutes.
Remove from oven sprinkle with cheeses. Bake potatoes for another 10 minutes until lightly brown and cheese is melted.

I pretty much only use this recipe for the cooking method, not all the ingredients. Instead of chives I use minced jalapeno and instead of parsley I use cilantro. For the cheese I use monterey jack and cheddar (and use more of it) and omit parmesan. Baked potatoes, tex mex style. When serving, top with a dollop of sour cream.
