Ingredients:
2 baked potatoes
1 cup chopped rock shrimp
1 cup Chopped Lobster meat
2 teaspoons chopped red onion
1 tablespoon chopped garlic
4 tablespoons Goat Cheese
1/2 cup Heavy Cream
Salt & Pepper to taste

Directions:

Place Potatoes in oven and bake for 45 minutes or till soft. Let potato cool down. Cut in half and scoop out potato and reserve.

In a saute pan place 1 tsp olive oil and heat up. Add red onions, garlic and saute for 2 minutes. Add shrimp and lobster to pan and cook for 3-4 minutes. Add potato filling with heavy cream and goat cheese and cook for about 2 minutes.

Place scooped out potato skins in oven to re-warm and add filling back to potato skins and serve.
