Starbucks' Low Fat Blueberry Muffins

ingredients
3 cups unbleached flour
1 cup sugar
1 tablespoon baking powder
1/2 teaspoon salt
1 cup skim milk
1/3 cup melted margarine
2 egg whites
1 1/2 cup blueberries
directions
Preheat oven to 375 degrees F. Grease a 12-cup muffin tin.
In a bowl, combine the flour, sugar, baking powder, and salt.
In another bowl, combine the milk, melted margarine, and egg whites. Mix well. Pour the egg mixture into the flour mixture and mix with a fork until just combined. Do not overmix.
Gently fold in the blueberries.
Spoon the batter into the prepared muffin tin, filling the cups no more than 3/4ths full.
Place the tin in the oven and bake at 375 degrees F for 20-22 minutes or until the muffins are golden brown.
Remove from the oven and let cool in the muffin tin for 5 minutes then remove the muffins to a cooling rack.
