ingredients
1 pound halibut fillet, cut into thin 1/2-inch strips
1 cup freshly squeezed lemon juice
3/4 cup freshly squeezed lime juice
2 bell peppers, red and green, seeded and diced
1 large red onion, diced
1 bunch fresh cilantro, chopped, reserve whole leaves for garnish
4 cloves garlic, minced
2 Serrano chiles, or to taste, seeded and finely chopped
1/4 cup extra-virgin olive oil
1/2 teaspoon cumin
salt and pepper, to taste
directions
Marinate the halibut in the lemon and lime juice briefly. Add the remaining ingredients. Cover and refrigerate overnight, or 8 hours.
Before serving, drain the juice from the mixture, using a colander. Put the ceviche in a serving bowl and surround with assorted color gourmet tortilla chips. Garnish with fresh cilantro and serve.
