ingredients

1 sponge cake, (10 to 12")
3 ounces strong brewed black coffee or espresso
3 ounces brandy or rum
1 1/2 pound cream cheese or mascarpone, room temperature
1 1/2 cup powdered sugar
unsweetened cocoa powder

directions

Cut across middle of sponge cake forming two layers, each about 1 1/2 inches high.

Blend coffee and brandy. Sprinkle enough of mixture over bottom half of cake to flavor it strongly. Don't moisten cake too much or it may collapse on serving. Beat room-temperature cheese and 1 cup sugar until sugar is completely dissolved and cheese is light and spreadable. Test for sweetness during beating, adding more sugar if needed.

Spread cut surface of bottom layer with half of the cheese mixture. Replace second layer and top this with remaining cheese mixture. Sprinkle top liberally with sifted cocoa.

Refrigerate cake for at least 2 hours before cutting and serving.

    This recipe definitely needs some modifications to come close to Olive Garden's.VERY IMPORTANT..to get an authentic taste,you need to use ladyfingers instead of sponge cake,mascarpone cheese instead of cream cheese,and rum,not brandy.Also i tried making it years ago and found that 3 ounces of rum is far too much..so i tried 2 ounces-still too strong.In my opinion the recipe should call for 1 ounce of rum and 5 ounces of coffee.And finally,i found that the ladyfingers should be dipped quickly into the coffee mixture rather than sprinkling it onto them.When i sprinked it,it did'nt soak enough and the ladyfingers were too dry.Also had to use an extra 4 ounces of mascarpone to cover the cake evenly.Hope this helps anyone who loves tiramisu as much as i do!

    What an expensive flop!!! I just made this Tiramisu according to these directions. Not even close to the Olive Garden's Tiramisu! When I blended the Mascarpone w/pwdrd sugar, it got a very mealy and wet texture to it. Not at all smooth and creamy. I also used Marsala wine which has a very distinct but sweet flavor instead of using the rum or brandy as some Tiramisu recipes call for. I will never make this again...it's way cheaper to buy it from the Olive Garden and know that it will taste delicious!
